"In November 2018 we drew an unboiled wort from a six hour mash stand. Whole leaf Southern Cross Hops were steeped in the wort before primary fermentation in our coolship. The resulting raw ale continued fermentation in one white Burgundy and one bourbon barrel for thirteen months."
